Banana, chocolate chip & walnut bread 

Ingredients

250g plain flour

2 tsp baking powder

3 large bananas, mashed

1 cup sugar

125g unsalted butter, melted

2 eggs, lightly beaten

1 tsp vanilla essence

½ cup dark chocolate chips

½ cup walnuts, roughly chopped

Method
Combine bananas, sugar, melted butter, eggs, vanilla essence, chocolate chips and walnuts in a large mixing bowl.

Sift over flour and baking powder; using a large metal spoon fold in flour until just combined.

Lightly grease a loaf tin and spoon in mixture. Bake in a pre-heated 180ºC oven for 1 hour and 15 minutes. Test cake by inserting a skewer into the centre of the cake, if skewer comes out clean (apart from melted chocolate chips) then bread is cooked.

Allow to stand for 15 minutes before turning out onto a wire cooling rack. Dust with icing sugar when completely cool.
