Rustic Seed Loaf - LOW GI
Ingredients 
450g wholemeal flour
1 tsp salt
30g sunflower seeds
30g sesame seeds
30g pumpkin seeds
7g dried yeast
25g pistachio nuts, chopped
25g pecan nuts, chopped
6 small shallots
50g Parmesan cheese, freshly grated
1 tbsp honey
300ml warm water
Oil, for oiling
Wholemeal flour, for dusting
Method
Place first 8 ingredients in a large bowl and stir. Combine honey and water in a jug and pour into flour mix, stir using a blunt knife until mix forms a dough. Tip dough out onto a lightly floured surface and knead for 5 minutes or until smooth. Place in a lightly oiled bowl, cover with a damp cloth and leave in a warm place for 2 hours until dough has doubled in size.
Re-knead the dough and shape into a round, place in a lightly oiled *Le Creuset 25cm Tarte Tatin Dish, cover with a damp cloth and leave in a warm place for 1 hour.
Bake in a pre-heated 220 º C oven for 30-35 minutes until bread sounds hollow when tapped. Remove from oven and allow to cool. Serve sliced with a low GI cheese and fruit platter.
