Nutty Boost Bar 

Ingredients

3 cups rice bubbles

¼ cup sunflower seeds

¼ cup wheat germ

¼ cup oat bran

40g chopped dried apricots

15g peanuts, chopped

10g cashew nuts, chopped

10g walnuts, chopped

2 tbsp Flora – lite spread

75g brown sugar

1 tbsp plain flour

¼ cup syrup

2 tbsp honey

¼ tsp ground cinnamon

Method

Grease a *Le Creuset Stoneware 23cm Square Baking Dish. Measure out a piece of foil, large enough to cover the baking dish, grease foil and then set aside.

In a large mixing bowl, combine first 8 ingredients. Melt spread in a small saucepan over low heat, stir in remaining ingredient. Increase heat and bring to a rolling boil, stirring continuously. Remove from heat and pour over rice bubble mixture, stir well to combine. Pour mixture into prepared tin, cover with foil and press firmly. Mixture needs to be as compact and firm as possible. Remove foil, refrigerate and allowing to cool completely. Remove from tin and cut into 12 bars.
