Roasted Garlic & Chilli Mayonnaise
Ingredients
1 tbsp roast garlic puree (see below)
1 cup mayonnaise
2 tbsp sweet chilli sauce
Method
Combine garlic puree, mayonnaise and sweet chilli sauce together in a small bowl. Refrigerate until chilled.

Ingredients
1 large head of garlic
Splash of olive oil
Pinch of crushed sea salt
Method
Cut about 2cm from the top of the head of garlic, so that most of the clove interiors are exposed. Place the head cut side up on a large square of aluminium foil. Sprinkle the garlic with a splash of olive oil and a pinch of crushed sea salt.
Gather up the corners of oil to enclose garlic and place in a small baking dish. Bake in a pre-heated 200 C oven for 45 minutes or until garlic is soft and golden. Allow garlic to cool, then gently squeeze out the garlic puree by hand.
