Mixed Berry Layer Cake 

Ingredients

12 slices white bread

1 cup Framboise liqueur (raspberry liqueur)

½ cup water

½ cup sugar

500g frozen mixed berries

500g mascarpone

2 tbsp icing sugar

1 tsp vanilla extract d

Method

Heat water, ½ cup liqueur and sugar in a saucepan until sugar has dissolved. Add berries and cook for one minute, remove from heat drain reserving juice and set aside to cool.

Mix mascarpone, icing sugar and vanilla until combined. Set aside.

Remove crusts from bread and trim to fit a *Le Creuset 28cm Terrine. Brush one side of each bread slice liberally with remaining liqueur.

Line sides and base of terrine with a double layer of plastic wrap extending over the sides. Cover base of terrine with bread, brushed side down. Spoon over a third of the cooled berries. Spread over a third of the mascarpone mixture. Place another layer of bread brushed side down on top of the mascarpone; repeat layering with berries, mascarpone and bread until all ingredients have been used, finishing with a layer of bread.

Cover the pudding with the sides of plastic wrap and a piece of cardboard cut to size. Weigh down with a couple of cans of food and refrigerate over night.

To serve, unmould the pudding, cut into thick slices and serve drizzled with reserved juice
