Crayfish Cakes 

Ingredients

1 cup roast garlic & chilli mayonnaise (see recipe)

3 tbsp olive oil

½ cup red capsicum, chopped

½ cup celery, chopped

½ cup red onion, chopped

2 tbsp jalapeño chilli, seeded and chopped

250g cooked crayfish meat, coarsely chopped

1 egg, beaten

5 cups fresh breadcrumbs made from crustless French bread


Method

Heat 1 tablespoon of oil in a *Calphalon One 30cm Frypan over medium heat. Add capsicum, celery, onion and jalapeño; sauté 3 minutes. Transfer to large bowl. Mix in crayfish meat, egg, ½ cup roast garlic & chilli mayonnaise, and remaining 2 teaspoons lemon juice, then 1½ cups breadcrumbs. Divide mixture into 8 and form into cakes. Dredge cakes in remaining breadcrumbs, turning to coat. Place on baking sheet.

Heat remaining oil in frypan over medium heat.  Working in batches, add crayfish cakes and cook until golden brown and cooked through, about 4 minutes per side. Or alternatively bake at 240º C for approximately 15 minutes, turning once during cooking time. Transfer to a serving, with remaining roast garlic and chilli mayonnaise as a dipping sauce.
