Rapid roast pork

Ingredients

1 pork fillet (about 300g)

1 tbsp seeded mustard

2 tsp finely chopped fresh rosemary

2 tsp sea salt

½ tbsp olive oil


Method
Heat oil in a *Le Creuset Rectangular Oven Dish over low to medium heat on the top of the stove. Sear fillet for 30 seconds on all sides.

Remove dish from heat. Brush top of fillet with mustard and sprinkle with combined rosemary and salt.

Place dish in a pre-heated 200 º C oven and bake for 15 minutes. Allow to stand in a warm place for a further 5 minutes before carving into medallions. Serve with seasonal vegetables.
