Slow cooked lamb shanks
Ingredients
1 tbsp olive oil
4 large lamb shanks
1 onion, finely chopped
4 cloves garlic, crushed
1 large carrot, sliced
2 x 415g cans, chopped tomatoes
1½ cups dry red wine
1 tsp dried marjoram, crumbled
Method
Heat oil in a *Le Creuset 29cm Oval French Oven . Add lamb shanks and cook until brown turning occasionally.
Remove lamb from French oven; set aside. Reduce heat. Sauté onion, garlic and carrot until onion is tender. Stir in tomatoes with their juices, red wine and marjoram and return lamb to French oven. Season generously with salt and freshly ground pepper.
Cover and simmer for approximately 2 hours or until lamb is very tender and falling off the bone. Uncover and boil liquid until reduced to sauce consistency. Serve immediately.
