Recipe Favourites Poultry Chicken Lasagne

Chicken Lasagne 

This recipe can be cooked using either a microwave or traditional oven methods


Ingredients

1 tbsp olive oil

500g cooked chicken

125g mushrooms, thinly sliced

1 medium onion, thinly sliced

½ medium green capsicum, thinly sliced

½ medium red capsicum, thinly sliced

375g jar herb & garlic tomato paste

250ml white wine

500g low fat mozzarella cheese, grated

250g packet instant lasagne sheets

 

Method - Microwave

Cut cooked chicken into thin strips, place in a microwave safe dish together with mushrooms, capsicum, onion, wine and tomato paste and cook on high for 3 minutes.

Spoon a layer of sauce over the base of a greased *Le Creuset Stoneware 26cm Rectangular Dish, sprinkle over some grated cheese and cover with a single layer of lasagna sheets

Continue layering sauce, cheese and lasagna sheets finishing with a layer of chicken sauce and cheese.

Cover dish tightly with microwave safe plastic wrap. Microwave on high for 10 minutes or until lasagna sheets are soft.

Transfer to a pre-heated grill, cook for 5 minutes or until cheese is browned.

NOTE : When layering lasagna, make sure sauce and cheese cover lasagna sheets to avoid burnt pasta when cooking.

Method - Traditional Oven

Heat olive oil in a large Frypan and sauté chicken until slightly browned. Add mushrooms, capsicum, onion, wine and tomato paste; cook, simmering gently for approximately 10-15 minutes.

Spoon a layer of sauce over the base of a greased *Le Creuset Stoneware 26cm Rectangular Dish, sprinkle over some grated cheese and cover with a single layer of lasagna sheets.

Continue layering sauce, cheese and lasagna sheets finishing with a layer of chicken sauce and cheese.

Bake in a pre-heated 180 º oven for 30 minutes.

NOTE : When layering lasagna, make sure sauce and cheese cover lasagna sheets to avoid burnt pasta when cooking.
