Breakfast risotto
Ingredients
3 cups cooked Arborio rice
1 cup orange juice
½ cup low fat yoghurt
1½ tbsp brown sugar
2 cups chopped mixed fruit
Method
Combine rice and ½ cup orange juice in a *Calphalon One 22cm/2.8Lt Chef's Pan. Cook over medium heat for approximately 15 minutes or until orange juice is absorbed. Add remaining orange juice, stirring until juice is fully absorbed. Add yogurt and brown sugar; stir until dissolved. Fold in chopped fruit of your choice and serve immediately.
