Smoked Chicken Rice Cakes

Ingredients

200g Basmati rice

375ml water

300g smoked chicken breast, diced

1 cup semi sun dried tomatoes, roughly chopped

175g grated mozzarella cheese

4 spring onions, thinly sliced

¼ cup basil leaves, finely sliced

3 eggs, lightly beaten

Method

Grease 6 *Le Creuset Stoneware Ramekins, and line bases with baking paper.

Bring rice and water to boil, stirring occasionally, lower heat, cover, and simmer for 12-14 minutes or until rice is soft and liquid has been fully absorbed. Remove from heat and cool completely. Place rice and remaining ingredients (except cheese) in a large bowl. Mix well to combine, seasoning with salt and pepper.

Spoon mixture into prepared pan. Sprinkle with cheese and bake in a pre-heated 200 ° C oven for 15-20 minutes or until cakes are firm to touch and golden.

Turn onto a wire rack and allow to cool completely before storing refrigerated in an airtight container.
